Recipe | Spring Chick Salad
Ingredients
- SALAD
1 cup of diced apples (we recommend envy, honeycrisp, or pink lady apples)
1 cup red grapes, sliced in half
3/4 cup diced celery
5-5 1/2 cups cooked, roast chicken, rustic chop
2 tbsp fresh chopped rosemary
3-4 green onions, finely chopped
1/4 cup fresh Italian parsley, coarse chopped
Candied nuts for topping
- DRESSING
2 tsp dijon mustard
1/2 cup greek yogurt
1/4 cup extra virgin olive oil
1/2 tsp lime juice
1/4 tsp sugar in the raw
salt and pepper to taste
Directions
- Combine all salad ingredients together in a bowl and refrigerate for 30 minutes before serving.
- Combine all dressing ingredients together and pour over salad mixture.
- Top with candied nuts. Enjoy!
