A Brief History of the Hamburger*

Putting a piece of meat between two slices of bread is not an invention of recent centuries. Similar foods had existed in Europe as far back as Genghis Khan, specifically minced meat made into patties (can you say steak tartare) that him and his followers then introduced to Moscow, Russia. Russian ships brought recipes using steak tartare to the Port of Hamburg; the city states that now comprise Germany adopted this minced meat and began making their own dishes. Hamburg being an important port in the 18th century for those traveling from the Old World to the new brought with them to America their recipes including the meat patties. While not yet a hamburger, a similar idea was set in place by the 4th Earl of Sandwich, an English aristocrat, in 1765 when he requested his meal to fit between two pieces of bread so he could eat and keep his hands clean while playing cards.

Cooking Tips for a Successful Grilled Cheese:

  • Use a seasoned cast iron skillet or a cast iron electric skillet to make grilling easier
  • Put a healthy pat of butter in the warmed pan and let it melt before grilling your sandwich
  • Aim for a low-medium heat so as not to burn your bread before your fillings are melted and cooked.
  • Cook each side about 3-5 minutes or until toasty, golden brown.

April 6th marks the eve of the Cullen-Harrison Act going into effect on April 7th, 1933. President Franklin Roosevelt, just recently sworn into office, fulfilled his first campaign promise by signing into law a bill that raised previous alcohol content in beverages from 0.5% to 3.5% by weight. While alcohol was not impossible to find in the 14 years of Prohibition (Chicago alone had as many as 20,000 speakeasies and Utah's own Ben Lomond Hotel in Ogden was home to an underground speakeasy that is rumored to have been visited by Al Capone himself), the Cullen-Harrison Act was the first legal concessions regarding alcohol content. It's officially French Bread day and we have the warm, familiar smell of baking bread wafting through our offices - only one of the benefits of having an in-house bakery in our building! Of course we have to have some history like we did for Croissant Day: did you know that following the French Revolution (a war that was started by the lack of bread), the French government actually set down laws that regulated what constituted "French Bread" or pain d' egalite ("bread of equality")? These laws specified ingredients and baking methods. Today, however, french bread is characterized as a long loaf of bread with a thick, golden crust that should crackle when squeezed. Plus, it's delicious!
